In her search for Weight-Watchers-friendly, desserty foods, Lauren came across an excellent substitution. The original recipe was for chocolate muffins, made thusly:
1 box chocolate cake mix
1 can (the smaller one) pumpkin
4 T fat-free plain yogurt
Mix, put into muffin papers, and bake at 350 20-25 minutes. That's it. They freeze nicely, they're moist, and they're not only amazingly good but also amazingly good for you. The other day, we had some actual chocolate cupcakes that Lauren had made to practice frosting for our reception, and Lauren decided she actually preferred the low-fat version above.
Tonight, we discovered that it works quite well with carrot cake mix as well. The only problem we ever has is that the papers tend to stick to the muffins, though freezing them fixes this.
