The continuation of la dolce far niente

posted Friday, 30 June 2006

Over the summer, I am trying to get rid of all the food in my cabinets so that I'm neither moving it all across the country nor buying a bunch of food when I already have food in my cabinets. In the course of checking to see just what food I have, it turned out that I have four jars of peanut butter in varying degrees of uneaten-ness. I can't explain it, but there they are.

So, in an effort to get rid of it, I scanned the web for a Peanut Butter Bread recipe and this morning I whipped up a loaf:

Combine 2 cups flour, 1/3 cup sugar, 1 tsp salt, and 4 tsp baking powder. Add to this 1 1/2 cups milk (I used skim) and 1/2 cup peanut butter.

Mix well, pour into a greased loaf pan and bake at 375 for 50 minutes.

It was good with jam or honey. Not amazing, just good, and it has just under 30% of its calories from fat. and it gives me a way beyond PB&J sandwiches.

I watched some World Cup and made a cheeseburger on the grill. Also, saw the most amazing thing. In my fridge, I had some cheese slices from late last summer and they were still good. They'd been sealed very tightly and kept refridgerated and they weren't even individually wrapped slices.

Of course, if I don't blog ever again, you'll all know that the cheese wasn't as good as I thought.

Enjoy your weekend!
